Burning Kiawe in a Pizza Oven

800°F, ninety-second bakes, and a wood that brings sweetness to the crust.
A wood-fired oven cooks by three routes at once: conduction from the hot floor, radiant heat from the dome, and convection from the flame curling overhead. Get all three in balance and a pizza bakes in 60 to 90 seconds with a leopard-spotted crust that no home oven will ever produce.
Kiawe is well suited to this. It is dense, burns hot and long, and throws less resinous smoke than softwoods — which matters when the flame is a few inches from the food and there is no lid between them.
What to Burn
Kiawe Splits or Chunks in the firebox - whatever your oven burns.
Any oven with a stone floor and a real fire counts - the $400 backyard box and the crane-lifted Italian dome run the same kiawe. The masonry bonus: it's a heat battery. Fire it once, cook for two days - pizza the first night, roasts as it falls, jerky on the embers.
Getting to temperature
Build the fire in the center of the oven floor and let it run there for 30 to 45 minutes, feeding small splits steadily. The dome will go black with soot and then, as it passes roughly 650°F, burn clean again from the top down. That clearing is the oven telling you it is ready, and it is more reliable than any thermometer.
Then push the fire to one side, sweep the floor with a brush, and let the heat even out for ten minutes. Floor temperature is what actually cooks the base — 750 to 850°F for Neapolitan, lower around 600°F for a New York style with a longer bake. An infrared thermometer pointed at the floor is the single most useful tool for this.
Keep a small flame
You want a live flame licking up the dome the whole time you are baking, fed by small splits added every few minutes. That flame is what cooks the top of the pizza. A bed of coals alone will burn the base and leave the cheese pale.
Turn the pizza every 20 to 30 seconds with a peel. The side facing the fire cooks far faster than the far side, and 90 seconds is not long enough to fix an uneven bake after the fact.
The oven outlives the pizza
A masonry oven holds usable heat for many hours after the fire dies, and the falling temperature curve is a gift. Roast vegetables and fish at 500°F once the pizzas are done, bread at 450°F after that, and put a pork shoulder or a pot of beans in overnight at 250°F as it coasts down. One fire, three meals.
What goes wrong
- Baking too early. If the dome is still black, the oven is not ready.
- No live flame. Coals cook the bottom; flame cooks the top.
- Skipping the floor sweep. Ash on the stone tastes exactly like ash on the stone.
- Not turning. Every 20 to 30 seconds, without exception.

Low & Slow
This one is a masonry move - small backyard ovens can't idle at 220. In a dome: after the evening's cooking, rake the coals, lay on one kiawe split, and seal the door. It creeps down through 300F overnight and still holds 200-250F in the morning - meat in at midnight is done for lunch.
Fuel load: One split on raked coals, door sealed (masonry).
Roasting
Backyard oven: throttle the fire back and door-gap it to hold 350-500F, turning the food often - small ovens have hot corners. Masonry dome: let the fire fall to a coal bed, door cracked; the falling oven holds the roast window for hours.
Fuel load: The burn-down from pizza - little or no new wood.
Hot & Fast
Backyard oven (the Costco kind): run kiawe chunks or splits in the firebox wide open until the stone reads 650-750F on an IR gun - most hit it in 20-30 minutes. Masonry dome: fire with splits 1-1.5 hrs until the ceiling soot burns white, then rake the coals to one side and cook on the floor beside the fire.
Fuel load: Backyard oven: a few chunks, fed as it burns. Dome: 4-6 splits to fire it, a split an hour to hold.
Planking
Either oven at 375-400F, soaked plank on the stone away from the fire side.
Fuel load: Falling heat - nothing new.
Cold Smoke / Cure
Masonry only: a day-after dome at 160-200F with one smoldering kiawe chunk is a ready-made curing chamber. IR gun the floor and crack the door to steer it.
