Smoking with Kiawe on a Kamado

Thick ceramic, tiny fuel appetite, and a temperature curve that only moves one way easily.
A kamado is an insulated ceramic egg, and the insulation changes everything. It burns a fraction of the charcoal a kettle does, holds a target temperature for twelve hours without attention, and runs so efficiently that a full load of lump can outlast two cooks.
The trade-off is inertia. Ceramic that holds heat this well also refuses to give it back. Overshoot your target and you will wait forty-five minutes to come down. The entire discipline of kamado cooking is sneaking up on a temperature from below and never blowing past it.
What to Burn

Load it once, bury the chunks
Fill the firebox generously with kiawe lump — more than the cook needs, because leftover charcoal simply waits for next time. Bury two or three kiawe chunks down in the lump rather than laying them on top. As the fire burns down through the load it reaches each chunk in turn, and smoke arrives in waves across the whole cook instead of all in the first hour.
Light one small spot, not three. A single starter cube in the center gives you a controllable fire that grows into the load. Three lighting points on a kamado is how people end up at 400°F when they wanted 250°F.
The deflector decides the cook
Plate setter or heat deflector in means indirect: the ceramic becomes an oven, and that is your setup for anything low and slow or roasted. Deflector out means direct, and a kamado wide open will pass 700°F, which is steakhouse territory and the reason people keep these things.
Open the dome slowly when the cooker is hot, and crack it an inch first. A sudden rush of oxygen into a hot, oxygen-starved chamber produces a flashback that will take your eyebrows with it. Every kamado owner learns this once.
What goes wrong
- Overshooting. Start closing vents down 50°F before your target, not at it.
- Too much lighter surface. One cube, one spot.
- Chunks on top. Bury them, or all your smoke arrives in hour one.
- Clogged bottom vent. Ash builds up and strangles the fire; clear it before every long cook.

Low & Slow
Fill the bowl with lump, bury 2-3 chunks at different depths, heat deflector in, vents barely open - a kamado will hold the pit temp below all day.
Fuel load: Full bowl of lump + 3 chunks buried at depths - you will have leftover fuel.
Roasting
Deflector in, vents set for the pit temp below, chunks buried mid-load.
Fuel load: Full bowl + 2 chunks mid-load.
Hot & Fast
No deflector, vents wide open, let the dome climb - kiawe lump loves 600F+.
Fuel load: Full bowl, vents wide.
Planking
Deflector in at 400F, soaked plank on the grate.
Fuel load: Half bowl.
Cold Smoke / Cure
Tiny lump load, one chunk, vents at a whisker - hold 160-200F.
Fuel load: Quarter bowl + 1 chunk.
